Preheat your oven to gas 3/325 F/170 C.

Sprinkle the lamb legs with salt and pepper. Heat the oil in a large heavy casserole and brown the lamb thoroughly on all sides to seal in the juices. Remove the meat from the pan and discard all but two tablespoonfuls of the fat.

Add the sliced onion, carrot, leek and turnip and cook them gently until soft. Stir in the flour, the chopped anchovies and the tomato purée or paste, and cook for 1 minute. Pour in the wine, bring everything up to the boil, and then allow to simmer gently for about 10 minutes.
